2| Red sauce Pasta🍝

Sharing with you a quick pasta recipe with the minimal supplies!

Our star ingredient for the day- Tomatoes!🍅🥫

Forget about Italians, even Indians cannot imagine cooking without tomatoes.

Tomatoes are an integral part of the Indian cuisine. We use them every single day;
tomato soup, tomato rasam, chutney, in our gravies and more. Basically can’t think of cooking without them.🤷🏻‍♀️

Surprisingly, tomatoes did not originate in India but in Mexico.

“It made its way to Europe in 1554. Since nobody ate tomatoes at that time, they became ornamental plants because of their beautiful red colour.
Gradually the FRUIT reached India and people started using it as a commercial crop, thanks to its tempting colour and taste.”😍

And now that we have held onto them, let us put them to good use and dive straight into the recipe 👩🏻‍🍳

Prep Time: 15 Minutes
Serves: 2

Ingredients:

I used Spaghetti. Other than this, Penne also goes well with red sauce.
1 big onion; puree of 2 medium-sized tomatoes; 1/2 cup milk; 5-6 garlic cloves; herbs and chilli flakes and fresh basil leaves.

How to make Red Sauce Pasta?

Step 1: To boiling water, add the pasta of your choice along with salt and cook till al-dente.
(If you like your pasta softer, cook it a little more than al-dente)
(Tip: Save the pasta starch for later)

Step 2: Heat some olive oil in a pan, add garlic and cook for a minute.🧅
After this, put in the chilli flakes, chopped onions and cook till translucent.

Step 3: Add basil leaves (dried) and some mixed herbs.🌱

Step 4: To this, add the tomato puree and a pinch of salt. Cook for 4-5 minutes.
Keep stirring till it is cooked well.🥫

Step 5: Add half a cup of milk and cook for a couple of minutes.🥛
At this point, you may also add the cheese of your choice.

Step 6: Add some cooked pasta water (starch) to the red sauce for better consistency.

Add the boiled pasta, mix it well, sprinkle some parmesan cheese, top it up with fresh basil leaves.🍝


Voilà! The food is ready to be served.

The best part, you can make it with minimum ingredients, and have the maximum variations.

Side Note: You can always add:
VEGGIES: Toss some mushrooms, zucchini, broccoli, capsicum in olive oil. Cook for a couple of minutes till they are crunchy and sprinkle some mixed herbs, salt and chilli flakes.🥦🍅🫒🥕

CHICKEN: Boil some chicken, mince it, add some herbs and toss it in the pasta.🍗

Notice the flag of Italy it has three colours; red, white and green and my pasta has them all.🇮🇹
